We had a short layover in Atlanta on our way to Mississippi on Thanksgiving Day. We walked the terminal briefly, and elected to stop at Atlanta Bread for a snack. There was a very long line and lots of employees were working hard to make the experience speedy. They were very kind considering they were stuck at work on a holiday. We were amused by their uniforms. Each shirt had a word on the back that was a play on words; for example: Teashirt. It was very cute.

To prove either how popular the restaurant was or to prove they weren't prepared for the holiday crowd, while we were waiting after placing our order, we heard that they had run out of sesame bagels. Luckily, I had chosen a cinnamon raisin. I ordered it with butter and to my shock, the answer was to spray Pam on the bagel before toasting it. I was very disappointed in my bagel. I also was disappointed because I wanted a smoothie, but they were out.

Ranch Dressing Recipe-Can Be Lactose-Free!

This is another one of my mother's popular recipes. She makes her own ranch dressing. Because it doesn't have a strange aftertaste that sometimes comes with buttermilk ranch, isn't as salty, and can be made dairy-free, it's quite popular. In fact, I know people who don't like ranch dressing at all who each this dressing. It also works great as a dip. The dip in the photograph was slightly thicker because I didn't add milk due to known food allergies of the guest of honor.

The only caution is that this recipe is significantly about taste. Taste it. Taste it often. Be very careful to follow the recipe. When I made this two months ago, I wasn't so careful because I thought I remembered the recipe well and have never ruined it. . .til now. It came out way too salty. Generally, there are ways to fix almost any mistake with this dip. If it is too salty, add a little more mayo and additional seasonings. Too much lemon? Salt helps that out. That's why I say: TASTE IT!

This dip has so many uses. You can use it to dress potato salad with some green onions and veggie bacon bits. I love to make cole slaw out of it. It even tops a Mexican salad well. The last thing Mom created from the base was her 1,000 Island dressing. The notes for that are at the bottom of the recipe.

Recipe for Ranch Dressing a la Claire

  • 1 C mayonnaise
  • 1 t onion powder
  • ½ t garlic powder
  • ¼ t celery seed powder
  • dash red pepper
  • 1 t lemon juice
  • ½ t sugar (optional)[I don't ever add this.]
  • 1 t sweet basil, dried
  • 2 t parsley, dried
  • 1 t chives, dried or fresh
  • ¼ t salt or to taste
  • ¼ C milk or ½ C milk (optional or soy, if preferred)

Mix mayonnaise, lemon juice, and dry ingredients. Add ¼ cup milk for dip or ½ cup milk for salad dressing.

For 1,000 Island Dressing: Add ¼ cup dill pickles, finely chopped and 1 tablespoon ketchup.

A wise and loyal reader of ELAR wanted details of the bagged lettuce Paul helped me prepare a couple days before this post. You can find out the step-by-steps for this money-saving move on this post from earlier this year. I bought a huge head of lettuce at Freshfields Farm for $1 on Monday and bagged it that night. A week later, it still looks brand new, which is great for having a small variety in the fridge since I never know what I want right now. Thanks, Fely for pointing out the need to revisit this post!

Qdoba-Maitland, Florida

$1 Each Taco Tuesday-Qdoba


We went out to Qdoba last Tuesday night with Travis and Patty, friends that work with Paul, but Patty and I knew each other long before we were married. They loved it and said they would go back. The great thing was that Qdoba has "Taco Tuesday" where chicken and beef tacos (crunchy or soft) are just $1 each. Paul asked the servers, and they agreed to make the vegetarian ones $1, too. (Why not? After all, the veggie ones are cheaper to make than the meat ones.) Paul had salsa, beans, cheese and lettuce on his, but it looks like guac would have cost extra.

For that reason, I stick with the burrito. Since beans are a texture not too favored right now, I just had rice, cheese, guac, pico de gallo, and a green medium salsa. Qdoba is always yummy. (Although, it always seems to taste just a little better when we're eating it in an airport coming to or from Italy, but that's another story.)

My fairly limited research doesn't say how long this great $1 taco deal is good for, and I did see a tweet from twitter that suggests the deal may be on another day of the week in another city. So, give your local Qdoba a call.

Sometimes, the photos of a meal go up on flickr before I get around to posting the story behind it. Our dear friend, Brent, had the kids by himself over the weekend while Lisa, his wife, was away with her family. Brent saw our picture of the Mexican Pizza, guessed how to make it, and made one for the kids. He said Kyle liked it, and he loved it. Apparently, Elena wasn't so sure about it. Therefore, I can actually post the opinions of this dish beyond our household. The first photo was from our dinner and the second is from Brent and the kids' dinner. Notice that Brent had mushrooms and bell pepper on the top of his pizza. The options are endless!

Recipe for Mexican Pizza

  • 2 Burrito-sized Flour Tortillas
  • 1/8 onion, sliced
  • 1/4 small bell pepper, sliced
  • 1/4 cup sliced black olives
  • 1/3 can Fire Roasted Tomatoes
  • 1/3 can Refried Beans
  • 1/2 cup (more or less) cheddar cheese

Preheat oven to 350 degrees. Place one flour tortilla in the center of a jelly roll pan (I like a pan with edges so juices don't run). Spread refried beans over the tortilla. Lay the onions, bell peppers, and black olives around over the beans and top with one layer of cheese (optional). Place second tortilla over the toppings (like a quesadilla), and top with the tomatoes and additional cheese. Bake in oven 7 minutes or until edges are brown and cheese is bubbling.

Time is flying by, and I'm not totally sure I remember all the story to go with this yummy, thick, salad-dressing-of-sorts. Perhaps Lisa will edit it soon. If I remember correctly, a Yumm Sauce is more from an Indian background. Lisa says although Indian food is a favorite for them, most foods are not made gluten-free. So, Lisa found this recipe on line and it makes a perfect topping. I'm most impressed by the quality of ingredients, like garbanzo beans and almonds, which add good nutritional value to the sauce.

Notes from Lisa

This sauce is great with rice or pasta. It can also be used as a dressing for salads, a topping on soup & chili, a spread for sandwiches, a dipping sauce for veggies, a basting sauce for grilling, or a mayo alternative. It's really quite versatile! But best of all, it's egg free, dairy free, wheat free, gluten free, sugar free, cholesterol free and low in sodium. There are nuts in it, however, for anyone with allergies to nuts. My kids love it! I'm sure if you make it you'll find a ton of creative uses for such a flavorful, yummy sauce. Go for it!

Recipe for Original Yumm Sauce

  • ½ cup oil
  • ½ cup almonds
  • ⅓ cup brewers yeast
  • ⅓ cup garbanzo beans, (or more- 1/2 c.)
  • ¼ cup soybeans, (or 1/2 c. silken tofu)
  • ½ cup water
  • ½ cup lemon juice
  • 2 cloves garlic
  • ½ teaspoon salt
  • 1 teaspoon curry powder

Blend nuts, beans and oil in food processor. Then blend in yeast and liquids one at a time. Puree until smooth. Voila!

  • New Asian patties from Morningstar Farms with chow mein.
  • Tortellini and Asparagus from last month's Gourmet Magazine.
  • Veggie Wraps with carrots, lettuce, asparagus, and basil.

I made this meal pretty soon after returning from Paris with our French dijon mustard by Maille. The recipe comes from The Splendid Table's How to Eat Supper, and I must say that it wasn't disappointing. None of the previous recipes from this cookbook have been disappointing. I really, really enjoyed this light salad with high protein. I suppose I have to add high cholesterol, too, due to the whole egg, but only about half of the yolk survives as the rest of the of the room is taken up by onion and garlic and seasoning.

One day last week, our office had a free lunch delivered by a drug rep. The menu was Tijuana Flats, a chain Mexican restaurant started by some local college kids that has done incredibly well with its fast food and HOT sauces with funky names. I was very impressed with the amount of food delivered because we are a large office and generally the amount set aside to allegedly serve 50-60 people only feeds 40 or less. So in case you were looking for a casual catering recommendation, this is my vote. Naturally, the salsa isn't special, but it's fresh. The same goes for the guacamole.

Tony's Deli-Orlando, Florida

This is a small, hole-in-the-wall restaurant with a Mediterranean food store attached. It has a Greek menu and has been voted Orlando's Best for a few years, with framed advertisements above the cash register. However, when you look at the plastic table covers with pictures of different kinds of pasta and the "silk" leaves and plastic grape clusters hanging from the ceiling, you might get slightly confused. Paul had a falafel sandwich in a great thick bread wrap. I had the hummus and tabouleh sandwich. Both had lettuce and tomato added with a creamy cucumber dressing coating every bite.

Believe it or not, this recipe is the result of a slight misunderstanding between my mother and I. We both like roasted sweet potatoes. She heard on a cooking show one day that if you brush them slightly with olive oil and cook them at 500' for 20 minutes, they get really crispy. I agreed to give it a shot. However, I didn't realize that she had put the potatoes in the middle of the oven with it set on "Bake". I put mine on the top rack set on "Broil" and turned them at 10 minutes when they started to brown too much.

Paco's is a small restaurant on Fairbanks Avenue and should almost have a downtown Orlando address instead of a Winter Park address. With its size and mismatched table linens and chairs, it might be hard to imagine how the restaurant could be celebrating 27 years and consistently have a line of hungry patrons waiting in the small entrance. The easiest answer would be really good food and really good service.

I had been wanting an egg salad sandwich and was happy to make my own with a new supply of eggs purchased for holiday baking. Also, I came across some flatbread and was interested in giving it a try. Paul often likes sandwiches on pita bread, but good pita is hard to come by around here. I thought this might be an acceptable replacement.

These are the absolute cutest cheeses I've ever seen. They come individually wrapped and in large numbers in Costco's Special Cheese section. Paul can easily take one to work. They look adorable sitting beside a dinner plate. And they make an ordinary salad definitely look unusual. The cheese is very soft and mild. I love to sprinkle a bit of black pepper over the cheese to highlight its true white color.

I love this sandwich. I have no idea what real bacon tastes like, but I've served it where I volunteer and this looks and smells better. This is great for lunches or for a quick dinner.

Chicken Noodle Soup has always been a favorite to me. My mom has had this recipe forever and when my grandmother had a day care center, she cooked it for the kids. And the moms could never understand why their kids refused to eat the soup they warmed from a jar. Those were good memories.

We're big fans of Mexican, and generally don't mind a visit to Taco Bell when it's good. However, since Taco Bell has come out with a line of products in grocery stores, we prefer to do Taco Bell at home. We use the vegetarian blend refried beans and on occasion their medium taco Sauce. Most of the time Paul likes his Cholula sauce instead. It has a stronger vinegar taste.
