At least one of us is back from New York City, and I had a blast. (Paul comes home late tomorrow.) I can't wait to share all the photos and reviews of some really good food. Although, I'm sorry to say sometimes we only had two meals in the day because we were so busy being tourists.

When I got back, I got really nervous cause my fridge was completely empty. I had to make a trip to Publix for some basics like fruit, cereal, and milk to survive tomorrow. My plan for the remainder of the week is to eat what we have in the pantry and freezer because I still want to clean out and restock after the first of the year. Two meal ideas: Wild Rice, Brussel Sprouts (Me) or Peas (Paul), and Butternut Squash; and Pasta in a Garlic-Almond sauce (similar to Gourmet Mag, only the almonds in the pantry are already cooked. I don't foresee it being a problem and will be creative necessary.

Applesauce making had a few changes this year. I don't know for sure if it was better than last year. That was too long ago and the applesauce didn't last long then, either! But, I'm happy with the changes and will continue on with these improvements.

Last week we ordered two cases, the equivalent of 114, apples to be delivered in the near future. I purchased the items for a number of reasons. First, we bought some from the same Washington source to support the local church school two years ago, and they were wonderful. We were disappointed they didn't have them last year. Second, when I purchase apples at Costco or Target a few pounds at a time, some come out yummy and some are mealy. I want consistency and the apples two years ago seemed to fit the bill. Third, they were significantly cheaper than buying them from local grocery stores--especially for the variety: Jonagold! Fourth, I love getting in the kitchen with Paul and my folks cause they got some, too, and having a family activity of preserving the apples in a variety of ways.

I found a great post about what Utah Deal Diva did with apples that were given to her. I intend to use some of her recipes and make some of my own. If you have recommendations, let me know soon so I can make a clear plan of attack cause that's a lot of apples!
