As you know, last week I was really feeling a need to use up some mint. Luckily, Aldi was running a great sale on yummy giant cucumbers. I really enjoyed this Thai Cucumber Salad that came from Epicurious. I didn't need a chili pepper because our banana peppers were spicy enough. I did add a touch of crushed "Triple Picante" red pepper from Florence. Plus I had to use peanuts leftover from our trip, too, because that's all we had left.
As a side note, I'd like to point out that we had had trouble getting Nora to like cucumbers. But when I sliced it this thinly on the vegetable slicer, she ate it. . .even with a touch of spice still on it. What a trooper!
And if you are wondering if I used up all my mint, well no. But I've learned to be more careful how I complain. A nasty little worm came in and bit wholes in every one of my leaves. It got mowed down with the opportunity to start anew. Lesson learned. And starting over is always nice, too.
