Menu Plan Monday-Labor Day Week

It's Labor Day, which technically means the end of summer. Lucky for us, we live in Florida, and summer is all relative. I'm trying to stick to cold salads and the last of the summer vegetables while also cleaning out the freezer of the fall items (Sweet potatoes and applesauce are all that's left.) that will soon be replaced.

Dinner Club this week will focus on some friends who recently had a baby and are in need of a) a reason to get out of the house and b) proof that this stage won't last forever. We're happy to oblige on Wednesday night with a simple, yet filling, meal.

Lunch Ideas

  • Monday-Brunch, actually-- gluten-free waffles, papaya, applesauce, eggs
  • Tuesday-Leftovers from Monday
  • Wednesday-Paul gets to eat out. I'll be interviewing for my replacement at work.
  • Thursday-I get a veggie-turkey sandwich. Paul gets that or the ability to eat at the cafe.
  • Friday-Hopefully lunch with Nonno and Nonna (Paul's folks will be in town.)

Dinner Ideas

  • Monday night-Veggie-turkey sandwiches and quinoa salad (with black beans, squash, zucchini, onion, and tomato in a lime dressing)
  • Wednesday-Dinner Club-Green beans and Lemony Couscous from Moosewood Simple Suppers
  • Eggplant over rice
  • Roasted Cauliflower, sweet potatoes and wild rice
  • Another zucchini salad (It was that good!)

Saturday afternoon was lima beans, corn, and salad. Saturday night was cereal and banana bread. Sunday lunch was baked beans and veggie-chicken sandwiches. Sunday night was veggie fajitas with zucchini, squash, and carrots.
