Menu Plan Monday July 26, 2010

As the evening winds down, I struggle to remember exactly where I wrote my plans for this week's menu. The menu is based significantly on items from Trader Joe's as we're getting to visit there again soon and want a clean shelf to refill. Also, I packed a lunch today, but a drug rep brought us lunch, and I promptly left my cooler at the office. I called up one of the girls and offered the food to her as long as she returned the empties to the office I would be at later in the week. I guess you can say it's nice to share. Plus, she got a good deal with homemade trail mix ( see recipe) and an unopened package of strawberry chips, too.

Lunch Ideas

  • Monday-Hummus, crackers, veggies, trail mix, sweet potato muffin
  • Leftover almond pasta and cauliflower
  • Spinach smoothie for me, Hospital dining for Paul
  • Peanut butter (fresh) and blueberry preserve sandwiches
  • Vegetable Sandwiches

Diner Ideas

  • Monday- Almond Pasta with my parents
  • Veggie Meat, baked beans, corn bread (Now that I have sugar!)
  • Brown rice with edamame, celery, carrots, green beans
  • Sweet Potato quesadills unless I find another tempting recipe with sauteed spinach
  • Burritos (which we didn't have last week), avocado, tomato

Although I've tried really hard to plan for weekends, I've learned that we inevitably miss one of the other planned dinners due to meetings or a desire to eat just fresh fruit and peanut butter or cereal. So, I end up just using whatever was planned as a snack over the weekend. That being said, I didn't get around to the banana bread last week because I ran out of sugar. I would be very happy to have boiled egg sandwiches over the weekend if we have enough eggs. Been kinda craving them. After all, it's summer.

Dinner Club has mostly been taking a back burner to my job. If all goes well, I should be finished working very soon and can throw my heart into the kitchen.
