Making Oatmeal for the Week


We didn't get around to making oatmeal this weekend. We didn't get around to stocking the freezer with PB&Js, either. But it's on the list for next week. What I did get done was a batch of sweet potato chocolate chip muffins, four of which went to friends down the street who greet us when we walk and four of which went to new neighbors with a new baby. I love sharing the happiness and goodness of life! Another batch is on the books for this week followed by a batch of banana bread.

Lunch Ideas

  • First off is an exciting and much anticipated Tuesday lunch with friends, Yvette and Stephanie who work with Paul. They are also special because they were our first guests for "Dinner Club."
  • We are taking advantage of lots of fresh summer fruit. They will be gracing our lunch plates all week.
  • Veggie sticks and hummus will be on my menu.
  • Paul gets to eat at Lakeside Cafe.
  • Hopefully, there will be leftovers from dinners to take for lunches, too.
  • All else fails, we have great ingredients for beautiful sandwiches.

Dinner Ideas

  • Tonight, my kind mother is making us a dinner of homemade pesto, pasta, and veggies.
  • Cauliflower Hash from Moosewood Cooks at Home, baked beans, corn bread
  • Vegetable kabobs over brown rice with Wild Tomato Vinaigrette
  • Maybe I'll investigate a roasted cauliflower over cheese ravioli in cream sauce.
  • And last is burritos because we have plenty of such supplies!

Saturday, we hope to have visitors for lunch after church. I'd like to make a nice zucchini parm (recipe coming soon). Sunday will be exceptionally laid back because this past Sunday was stressed with cleaning up and hopefully making our lives simpler. Paul has promised me a new dresser from IKEA. So, lunch and/or dinner may be there.
