Bob's Red Mill Gluten-Free Pancake Mix

This mix was such a success, I'm very surprised. It was easy to prepare, and the batter seemed to make perfect little circles on the griddle. No one ever would have known I failed to beat out all the lumps. I did add a teaspoon or so of vanilla flavoring, which the recipe on the back of the bag didn't call for. However, I think the flavorings are essential for making pancakes a bit sweeter and less like biscuits. They cooked up fluffy and golden. They didn't break apart easily when spread with peanut butter. (Even some regular pancakes do that!) I finished the last of them for breakfast this morning after our guests left. I was sorry to see them go, but was not sorry to have the last two left just for me.

At about $4.50 a package at Whole Foods (which fed three adults and two kids about two breakfasts), it might seem a steep price to pay, but if you have guests who are allergic to gluten and don't have a good collection of wheat-replacement ingredients, Bob's Red Mill Gluten Free Pancake Mix will like save you time and money. And I'd be willing to bet, you wouldn't even know they were flour-less.
