This is just one of the many beautiful views we had the first weekend in June while visiting the Rockies. It was an incredible, much enjoyed trip.
One of the great things about long car trips is that you get a lot done. In the length of time Paul was driving us back from Ft. Lauderdale yesterday, I had made lists (and the order) of things I need to do (on my ONE day off this week!) as well as my menu plans for the next two weeks! I was so proud of myself and even drove the last couple hours home so Paul could nap in the back with Nora. Sure wish I'd had my camera for that.
So, the menu for this week is based on fresh ingredients and STILL going through what foods I already have in the house. I also get to go shopping tomorrow for gluten-free goods for our house guests for next week. I am excited about trying out new foods and am glad I have an excuse to visit Whole Foods.
Lunch Ideas for This Week
- Paul's folks will be in town later this week. I'm sure they'll take him out for lunch those three days. Meanwhile, I'll be working. So, I'll get the leftovers.
- There are just a couple leftovers from last week: Baked potatoes, corn on the cob, and pasta. I'll use those for my own meal unless my mom ate them while she babysat Nora today or Paul took them for his lunch.
- Any leftovers from dinners this week will also make up my lunch.
Dinner Ideas for This Week
- Mexican Fajitas (onion, bell pepper, cheese, vegetarian chicken, corn, broccoli)
- Spinach Lasagna (may yield more leftovers for dinner other nights, too.)
- Mashed potatoes and gravy or quinoa pancakes, edamame dip, corn
- Mexican couscous, burritos
- We are leaving one night open to dine with friends. The menu may be based on the number of eaters.
Saturday is Nora's baby dedication at church. There will be a big luncheon of haystacks/taco salads afterward. I'm sure that will easily yield no dinner Saturday night or leftovers. Sunday is a big Happy 4th! We have no idea what's being planned. Paul's folks will be flying home, and we'll be preparing for more guests to come in. That day's activities will be on hold until later in the week.
If you haven't gone through the motions of planning your meals this week, I advise you to. I skipped it the last couple of weeks and noticed a bit more stress because of it. At least knowing there's food for a meal when you get home at night is a relief. It keeps me from fearing I may have to run to the store quickly to put something together. And again, that gives me more time with my baby girl, which is so important to a working mom.
