First I'll explain the photo as I'm sure it's getting more attention than the topic at hand. We were flying to Tennessee this past weekend, but we had to first stop off in Atlanta. The weather in Atlanta prevented us from even taking off from Orlando. We were delayed two hours, during which Nora was an absolute angel. She got lots of attention; plus the copilot asked Paul if he had a camera and let her visit the cockpit.
So now, we haven't been home three out of the four previous weekends--and the summer's not over yet! That means there's slim pickings in the pantry and my life consists of constantly unpacking clothes, washing them, and repacking them. All that being said, I begged my mother to come sit with Nora today so I could be a speedy shopper at Target and Publix. Thank you, Mom!
Menu Plan
- Monday, we had baked potatoes with sauteed summer squash and fresh green beans that my in-laws brought all the way from Mississippi. There's nothing like farm-fresh veggies to make an incredible meal. And for some reason, even our tomatoes don't taste as good as those did!
- Tonight was an unusual Dinner Club. We have friends who just had a baby. We invited them over for dinner, but their schedule is a bit strange at the moment. Instead, I made two dishes of eggplant parm from the Recommended Link on the right. One went to their house. One stayed here. I added a large side of homemade marinara sauce over spaghetti and added a bar of dark chocolate Toblerone for dessert.
- Wednesday, I plan to make vegetable fajitas featuring the banana peppers from our garden. I'll serve fresh corn on the cob alongside. It was too cheap to pass up!
- Thursday, my aunt and uncle are coming to meet Nora for the first time. Aunt Donna requires a gluten-free diet. I'm thinking of serving falafel with fixings, hummus and gluten-free chips, and a quinoa salad.
- Friday, will be a full house with a dear friend and his parents visiting and my aunt and uncle still being here. I'm needing a fast, gluten-free meal that serves a lot of people. I hope to come up with a brilliant idea for this dinner before it's too late.
