There's no menu plan this week. As you can see, we enjoyed a long weekend in the Rockies. More stories and pictures to come, I'm sure.
As is evident by my sporadic posting, we've been rather busy. A couple weekends back, we stayed with my grandmother while my parents went to my father's class reunion. Obviously, though we're having a very busy summer already, we're having a lot of fun. The next few weeks prove to be just as busy. All the fun of visiting family and family visiting us can make me very exhausted and leave little time for grocery shopping. Each week, I'll acquire milk and bananas along with any fresh fruit and veggies from the season. I don't expect to try any new recipes or even arrange a Dinner Club night for the rest of the month.
The only thing on my to-do list this week is to make some miniature blueberry pies for weekend desserts. If I accomplish that, I'll feel quite successful. These are times I really do appreciate stocking my freezer with frozen veggies when they are on sale. We'll also probably be eating a lot of rice and beans. On the bright side, such living off what's already in the kitchen can be economical. Fewer trips to the grocery store always saves money.
