Vegetables Ready to Eat

Currently, Nora is napping on my shoulder afteran exhausting, but fun swim. Paul is at an Orlando Magic game with a long-time friend, and I'm excitedly staring out the window at my zucchini. It seems my problem was that the high walls of the courtyard block the bees from being attracted. I hand-pollinated my male and female flowers carefully; trying to keep the pollen from staining my hands and clothes. I may invest in some Q-tips for more of that process. It's been positively amazing watching my one attempt successfully grow and how incredibly fast it has taken shape. The second it hits that 6 inch recommendation, I'm grabbing it and serving a delicious zucchini lemon pasta for dinner. We'll see if there will be any leftovers from that.

Lunch Plans

  • Possible lunch with my mom on Monday. Possible leftovers for Paul.
  • Beans and rice leftovers for both.
  • Old standby, hommus and fixings, goes to work with me. Lakeside for Paul.
  • We have friends in town, and we'll try to picnic at the beach one day. Carrot sticks, chips, veggie-turkey sandwiches. Looking forward to it.
  • Leftovers for Paul. Veggie BLT for me.

Dinner Plans

  • My folks were sick this weekend. I didn't get to have my Tempura. It's on my list again for the sometime this week.
  • The Zucchini Lemon Pasta I'm so excited about.
  • Dinner Club may be out due to a church meeting I must attend one night. Paul will get cereal and fruit. It's a great time of year for fresh fruits. Don't feel sorry for him. I'll eat at the church.
  • Beans and rice with leftover beans from Friday night's Dinner Club and rice from the tempura will be great for my work night
  • We'll also save a night to dine out with the friends.

Next Saturday and Sunday seem so far away. It's hard to come up with something. Think I might like to wait and see what comes on sale this week. I am very excited about doing the Eggplant Parm I shared under my Recommended Links. It takes two hours; so, that ought to be a decent activity for a Sunday afternoon. I suspect that would be a lunch and dinner combo with the family. No complaints.

We're also expecting a friend to deliver this week. I'll be putting together some garlic rosemary potatoes for the family. And, I'm just dying to bake some blueberry muffins and banana bread.

There won't be a shortage of time in the kitchen this week! How about you?
