Sometimes, our minds are willing, but nothing else is able. . .to do anything. This week started out like that. Yesterday, I didn't even make it to the grocery store. Dinner wasn't so bad, though. This is when frozen veggies come in really handy.
Meanwhile, I've been a tad preoccupied. On Friday, I noticed a pigeon on the roof looking over the courtyard, eying my zucchini suspiciously. I went out, asked it what it was doing there, and clapped at it. At which point, it came and flew around me. Naturally, being the country-girl (yeah, right) that I am, I screamed and ran inside. Finally, on Monday afternoon I was out planting the new plants I got for my first Mother's Day and found in the opposite corner of my zucchini plant two baby pigeons. Paul got excited, but I was nervous the parent would remember me and not appreciate my being outdoors. That being said, it has taken a lot of nerve to run from the house out to the garage when I needed to go grocery shopping or to work.
Now, onto the real reason you are reading this post:
Lunch Plans
- Monday-fast food with my folks, Paul ate at the hospital
- Tuesday-Leftover soup from lunch last week when I was sick, guess Paul ate at the hospital.
- Wednesday-Coleslaw, wild rice, fruit for me; Paul will likely eat at the hospital again because there aren't any other leftovers to send with him.
- Thursday-hopefully, there will be some leftovers for Paul. I will taste-test the new Morningstar Farms Sweet and Sour Chicken.
- Friday-Hopefully, Paul will get some leftovers, I'm going to come up with something fun for fresh broccoli, since Paul isn't a huge fan of fresh broccoli.
Dinner Plans
- Veggie Saute with Wild Rice-Monday
- Tomato Sandwiches tonight because computer problems kept Paul at work late
- Fresh Corn-on-the-cob, baked beans, vegetarian skallops
- Roasted Cauliflower, pesto pasta (we have lots of basil), and our first tomato!
- Friday-Dinner Club, repeat Mexican menu and guests (Last time guests got sick.)
I would love to do vegetable tempura on Saturday for lunch followed by a light smoothie dinner or something very simple. Sunday will likely be leftovers from Friday night, either as chili baked potatoes or soup, or a replay of a taco salad. We also have friends in town we might be dining with.
