Surprise! Monday has rolled around again! Where does the time go? I have an idea where it went last week. I worked 5 days last week, which isn't normal for my 10-hour-days. I'm sorry to say some of those days totaled more than 10 hours. However, I'm grateful God got me through since the tiredness is already hitting.
One thing that took up some time this weekend was participating in the Celebration Founder's Day Race. Paul ran the 10K and walked the 5K with me. Fortunately, it wasn't so stressful because we normally put in about 3 miles a day. I was fearful that I would get dirty looks from people shocked that I would be so active at 27 weeks pregnant, but I actually got more looks regarding my LSU baseball cap. Giggle. You can take the Cajun out of the swamp. . .well, you get it.
OK, so onto the whole purpose for writing this post. It's finally chilly enough to create some soups in my kitchen. I was just too beat last week to stand up long enough to make the French Onion Soup. So, that's pretty close to the top of the list. Also, last night after we got home from Paul's office picnic, we had my folks over and I had to quickly put together a light supper because they had eaten a larger lunch. So, I made a batch of Vegetarian Turkey Tortilla Soup with enough leftover diced veggie-turkey and zucchini for another batch of soup later in the week. (Not the most energy-efficient cook, I chose not to make the batch all at once because I wanted to undercook the zucchini for reheating later in the week, but my grandmother needed the zucchini to be soft for her.) I think I have found a way to make it cheaper, too. There's some pasta leftover from Friday night. We may have it for dinner one night if we are as busy as we were last week. Otherwise, we'll take it for lunch.
Lastly, I suspect we'll get sandwiches or cereal one or two nights because I have two big choir rehearsals for our Thanksgiving program. At some point, I have to make a lactose-free birthday cake or similar celebration item for my staff's birthday next Monday. That will be something else to keep me in the kitchen.
And that's about it. Not the most creative schedule, but sometimes it's a challenge just getting dinner on the table. What am I talking about? I haven't even had the baby, yet!
