Grilling with a Pizza Stone


Thomas' Ingenious Grilling


I will start by wishing Thomas Dudley, a friend from high school, a Good Morning! as he told me he reads his Eat Like a Rabbit RSS feed with his breakfast before leaving each morning to teach science to some Mississippi high school students. (He mentioned that he had noticed a significant drop in new posts in the last four months. My apologies to all.)

Thomas had us over for a great light dinner (which is all I can handle these days) when Paul and I went home to visit his parents over Labor Day Weekend. He also is a father-to-be, and Janice has been very lucky to have his creative kitchen ideas to rely on throughout her pregnancy. (I'm not complaining about Paul, by no means! I've been grateful for him picking up the slack, too.)

Thomas was sure to not take any credit for this brilliant little cooking scheme. He preheated the oven to keep the vegetable quesadillas warm while he cooked each one over the grill on a pizza stone. The idea came from a William-Sonoma catalog that had a grilling stone. Thomas saw no reason to spend an extra $100 on the gadget and said his pizza stone would do just as good. He was right. I also really appreciated his concept because I am a firm believer that everything in the house needs multiple uses to save space and money. The quesadillas were fabulous, and we enjoyed the laughs of stories from the past, his stories about marrying into a much less vegetarian family, and his guitar duets with our brother-in-law, Dag. I can't wait to do it again with two little babies in tow!
