Menu for weeks of Apr. 12 and Apr. 19

For a detailed list of the planned menu for April 12, please see this previous post. Everything went smoothly until I realized I had mozzarella that was about to expire and tomatoes that didn't look good either. Thursday night, Paul had a foot race, and I worked late and spent a couple hours with my family. So, we didn't eat dinner at home at all on Thursday night and had homemade pizza with a focus on fresh tomato sauce for Friday night.

Speaking of footraces, Paul and I have a race the first Sunday in May. This means that we should be spending more time at the gym instead of in the kitchen. Training is even more important because I am having some foot pain, and Paul is having some knee pain. So, this week's menu has a goal of limiting cooking and cleaning time as well as not weighing down the stomach so we feel comfortable with extra time on the road. Here's my thoughts:

  • Veggie Hamburgers or Black Bean Burgers (we have a great stash of Morningstar Farms products.)
  • A veggie-chicken melt with a recipe from Moosewood Restaurant's Simple Suppers that I haven't made in a year!
  • The Dutch Boy (a lemon pancake) I haven't been able to make yet with some in-season fruit for a more breakfast-for-dinner option.
  • Veja-Link Sandwiches-a simple recipe my mom and grandma made a lot for us kids when we were little. It uses the same veggie-meat as we eat as hot dogs. Stay tuned for pictures, cost, and recipe.
  • Something with fresh spinach. Either a salad, sauteed to accompany rice, or with a pasta.
