Sauteed Vegetable Sandwich

When so many fresh ingredients are at your fingertips (especially during the winter time) it makes so much since to create a fantastic sandwich that mixes them all together. I enjoyed this so much because it was a fast creation and the flavors were fantastic.

Recipe to make Sandwiches

Thinly slice one zucchini and one squash. Set it aside and slice 1/4 of a large onion and mince 2 cloves of garlic. Generously cover the bottom of a skillet with olive oil and saute the onion until it is nearly translucent. Add the garlic. Be careful not to let it burn. Add the squash and zucchini to the skillet and cook until browned. Often, it's a really good idea to salt and pepper the dish to taste in the middle of the cooking process. Meanwhile, toast the bread.

Add any or all of the following items to the sandwich in addition to the sauteed vegetables:

  • Julienned carrots
  • Rocket or other lettuce
  • Sliced tomatoes
  • Basil
  • Mozzarella cheese slices
  • Mayonnaise
  • Balsamic Vinegar
  • Olive oil
  • Salt and Pepper
