Fried Zucchini with Badked Potato

Somewhere I heard about someone making fried zucchini. I started thinking it would be yummy. I like zucchini. I like fried foods (in moderation). And, after all, I like fried okra. I would have to like this, right? I served the zucchini with flatbread, rosemary and olive oil to make little sandwiches at the table. We liked it fine, except that it was greasy. I think I could get the same flavor without the extra oil just by sauteing zucchini slices like we do for the lemon zucchini pasta.

The baked potatoes are a different story. For just the two of us, I like to microwave the potatoes. Our microwave has a setting for baking potatoes; even though, Paul says it is technically still "steaming". To keep the potatoes vegan, I add olive oil, garlic or onion powder, fresh chives from our garden, and salt. For a vegetarian, but not vegan dish, I put shredded cheese on the side. Also when it's just the two of us, I steam vegetables (in this case, broccoli) in the microwave. That means dinner can be on the table in about 15 minutes because sometimes the potatoes take 10 minutes for themselves.
