Paul declared this creation great. He especially liked the crust. I really enjoy the flatbread as well. I just happened upon some Naan hand-stretched flatbread at Costco. I love making sandwiches out of it or serving it instead of French bread alongside pasta. I think it looks and tastes fabulous.
Recipe for Flatbread Pizza
- 1/3 can black olives, sliced
- 20 fresh basil leaves
- 1/2 small onion, diced
- 2 Roma tomatoes, diced
- 1 cup baby leaf spinach
- 2 cloves garlic
- 2 tablespoons extra virgin olive oil
- 2 Naan flatbread crusts
- 1/2 cup sliced mozzarella
- 1/4 cup grated Parmesan, optional
Preheat oven to 400 degrees. Pour olive oil into a small frying pan. Heat the oil on medium-high heat and saute onions until translucent. Add garlic, and stir well. Add tomatoes to warm. The longer the tomatoes cook, the more juicy they become. So, the length of cook time depends on the chef. I added the spinach to the tomatoes as soon as I washed it and cooked it down until it wilted, but was still bright green. Pour the sauce evenly onto the two slices of bread. Divide the olive and cheeses, respectively, and spread them evenly over the sauce. Bake in oven for 5 minutes. Top with basil, and return to heat to wilt the basil leaves.
Feeds two very well.
Serving suggestion: sliced pan-fried Fri-chik, soybean chicken substitute.
