This salsa went over so well at the group dinner, that I decided to take the same recipe and make it again in the form of enchiladas. Paul was confused because I used flour tortillas--which made it look more like burritos--instead of corn tortillas. However, it was quite the success because a few people came up specifically to shake my hands when it was done. As was common on those nights, there was a line for the food when I arrived, which gave me no time to take pictures. The above picture was a plate of leftovers we made for someone who was late. On the night of the enchiladas and Spanish rice, there wasn't a bite of anything left except the chips and salsa. This recipe made three Corningware dishes of burritos. One was vegan (without cheese on top).
Recipe for Enchiladas
- 39.5 oz. black beans (two large cans)
- 2 cans sweet corn
- 40 fajita-sized flour tortillas
- 1 can black olives, sliced
- 2 bell peppers, diced
- 1 large onion, diced
- 4 cans enchillada sauce
- 1 pound cheddar cheese, grated
- 1 lemon, juiced
- 2 garlic cloves, minced
- 2 Tablespoons Cholula seasoning
Open the cans, drain, pour in mixing bowl with diced vegetables. Pour lemon juice over vegetables. Stir in Cholula seasoning.
Open flour tortillas and lay them out flat. Spoon two heaping table-sized spoons into the burrito. Roll it tight and put it down on its seem in a Pyrex or Corningware dish. Fill free to push them together and cram them in. When the dish is filled, pour enchilada sauce over the burrito-enchilada-things with care to make sure it doesn't overflow the edges. Top with grated cheese, cover with aluminum foil and cook in the oven at 375' for 20-30 minutes. Garnish with fresh chopped chives.
