Shared Tofu Recipe (served with wild rice, sauteed spinach, sweet potatoes)

Tofu, Sweet Potatoes, and Wild Rice

The tofu recipe is from a friend, Fely Rugless, who is a firm believer in simple cooking. This is the first shared recipe from a reader for me to prepare and post. Paul really liked the tofu. I am new to making tofu at home . Still, it was a good consistency and well flavored.

Recipe for Crispy Tofu Patties

  • Drain the firm tofu block
  • Slice to desired width
  • Line a cookie sheet with Release foil
  • Shake soy sauce and Greek Salad Dressing (PUBLIX) on lined cookie sheet
  • Lay the sliced tofu, one layer, on the cookie sheet with the sauces
  • Shake soy sauce and dressing on top of tofu slices, spreading sauces evenly with a spatula
  • Bake in 350 deg. oven for 45-60 minutes or until desired crispness

I served the tofu with baked sweet potatoes (on sale at Walmart Supercenter for $0.25 per pound) which cooked on the same pan as the tofu, sauteed spinach, and Uncle Ben's microwaveable wild rice, which I purchased when I saw a special at the front door at Aldi.
