I specifically made this pizza to highlight the simpleness of using a soybean-based meat substitute in a meal. The prices for this meal are estimates because the price of the vegetarian food varies so greatly among stores. Certainly, a local speacialty health food store has the potential of being cheaper than a major supermarket.
Recipe for Chicken Florentine Pizza
- 1 tomato, thinly sliced
- 1 cup baby spinach, washed
- 2 dumplings Worthington Fri-chik, diced
- I pre-made Pilsbury Pizza Crust.
- Sliced Mozzarella cheese
Preheat oven to 400 degrees. Grease rectangular cookie sheet. Roll pizza crust out on cookie sheet. Brush with olive oil. Top with tomatoes, spinach and Fri-chik. Spread cheese slices thinly over pizza. Cook until the crust is golden. Sprinkle fresh chopped basil over pizza before serving.

These prices may look like a lot, but remember, the package of cheese is 2 pounds. That much won't be on the pizza. You can even cut the block in half and put the half untouched by human hands in the freezer. Also, there is plenty of spinach in the boxes that can be used later for a pesto sauce, whole in a salad, or sauteed.
