Black Bean and Corn Salsa

This post refers to the product in the very front of the photograph. The plate was a sampler platter at a buffet. I created the dishes. Hopefully, recipes for the other dishes will be available soon.

This post focuses on delicious, quick meals and the estimated prices for making them. My goal is to help families prepare healthy menus in spite of the depressed economy.

Recipe for Black Bean and Corn Salsa

Pour one can of black beans and corn into a bowl. Add one whole diced red bell pepper. Add one whole small or medium diced onion. Mix in 1 or two tomatoes, diced small. The seasonings include three tablespoons fresh lemon juice, 1 tablespoon dried Cholula Seasoning, and 1 teaspoon chili powder. Stir carefully, garnish with fresh chives, chill, and serve with corn chips. Blue corn chips are the best with this salsa. I love the color.

One of the assistant program directors served at this buffet announced "I could eat that whole bowl!" Such kind comments are way better and more encouraging than a simple "Thank you, this was lovely."

  • Free Fresh Lemon (Gifts from Paul's boss)
  • $2.50 Estimate for each type of seasonings. In truth, they outlived their receipts.
  • $1.69 Blue Corn Chips (Aldi) or
  • $3.59 Abuelita's Tortilla Strips (Costco)
  • $10.69 Total
