I made this appetizer twice last weekend. I have decided that spaghetti squash is best in October, because by November I was struggling to find good fall squash to purchase. The dish was a big hit at both events and the goods were all gone. There's no complement like the complement of disappearing food (as long as it isn't fed to the dog).
Our local Publix offers a large selection of French breads and rolls with sesame seeds, poppy seeds, or plain. We chose sesame seeds for this event and toasted the bread slices before serving. The extra crunch really complements the softness of the squash and pesto. We also brought Triscuit crackers to the first event. Many people even preferred the crackers over the bread.
At the first event of the weekend, I received complements like "Grade A!" And "Your mother is such a great cook, I was hoping some of it would rub off on you." Well, thanks Mom! Must be in the genes.
