One of my EMTs said this was his favorite squash. So, I purhased some on Friday. By Saturday, we were eating lunch at some friend's house and were served Spaghetti Squash. He answered all of my questions about preparation. And I excitedly created this fabulous dish on Sunday. With a salad, French bread, and pan-fried scallops, I was in heaven.
The squash I purchased at Publix had stickers on each one with microwave directions and serving suggestions. So, I microwaved the squash in a Corningware tart dish with saran wrap tightly wrapped around it. I turned on the microwave and came back 6 minutes later to find the humidity had created a balloon out of my saran wrap with a large and tight bubble over the tart dish. I nervously and quickly turned off the microwave and opened the door. I called for Paul and started giggling as the bubble deflated.
Meanwhile, I created my spinach pesto with walnuts, but left it a bit chunky. When the squash cooled a bit, I easily scraped the flesh out with a fork into another Corningware dish, added the pesto and reheated in the microwave just before serving. Next time, I think I will bake it a bit instead to dry it out because there was quite a bit of standing liquid either from the squash or from the pesto that made the dish a bit wetter than I was looking for. When Jack made it on Saturday, he said he baked it to help the butter and garlic settle in.
Just to keep opinions unbiased, I brought some leftovers to Alex, my EMT on Tuesday. He said it was really good. My head is now the size of the bubbled saran wrap in the microwave.
