We have visited Pei Wei numerous times, even in another city. Pei Wei is the fast food version of P.F. Changs. The food is consistently good with slight varieties in the flavor. For instance, this day the Pad Thai was a bit hotter than usual. We don't complain. We like it hot. Brown rice can be substituted for white rice with no extra charge. We almost always start with an appetizer of edamame or spring rolls. Both are exceptional. And our two favorite dishes are the ones pictured above. They must have known it was Paul because they put extra peanuts on top.
What made this day exceptionally fun was that we chose to sit at the bar overlooking the chefs at work and play. There was a gentleman monitoring the dishes and calculating how long it took for a dish to get cookes and served to a table. We had so much fun watching him, and he began to talk to us. He said usually people get mad when they have to sit at the bar because they'd rather face each other and talk, but at the end of the meal they are happier. He also said the one girl behind the counter was measuring out meat and veggies to go in a dish. The chefs have been working there so long all they have to do is see the plate the girl lays out and they know exactly what was ordered and how to cook it. Toward the end of the meal, the man asked a chef to make a fire ball in his wok for us. The fire ball makes the wok slippery, but when they are busy, they just don't bother with it. Four of the chefs agreed to make fire balls all at the same time. It was a big wall. We loved every minute. They were nice and chatty when work slowed down. I immediately went to work the next day and told my EMT he had to bring his boys there. I doubt we'll ever sit at a regular table again!

I'm so glad you we can acquaint you with new food spots. This one is great when you don't feel like you're dressed up enough to go to P.F. Chang's. But then, you're always dressed well.
