Chicken Noodle Soup has always been a favorite to me. My mom has had this recipe forever and when my grandmother had a day care center, she cooked it for the kids. And the moms could never understand why their kids refused to eat the soup they warmed from a jar. Those were good memories.
Recipe for Chicken Noodle Soup
- Dice two Worthington Fri-chik patties per bag of Ramen noodles you will cook.
- Bring a pot of water to boil according to Ramen Noodle packaging directions.
- Dispose of seasoning packet that comes with the noodles. Instead add 1 tablespoon McKay's Chicken Seasoning (It is vegetarian.), 1 teaspoon each of onion and garlic powder, and a large handful of dried parsley to the pot.
- Add diced Fri-chik, and return to boil.
- Add package(s) of Ramen noodles. Turn of heat, but leave pot on burner for 10 minutes.
For the sandwiches, we just cut up strips of lettuce and tomatoes and laid them on slices of olive bread form our local Maitland Farmer's Market that we had spread hummus and mayonnaise on.
And it's that simple. This is a very quick meal for lunch at home or before you have to run out for the evening.
