Nachos don't normally come under the heading of excellent food for the body. But maybe it's just the way they are put together. When done using fresh ingredients, there isn't too much you can say against them. That being said, if it were served with a salad or had a salad on top of it, it would look perfectly appetizing and healthy.
These nachos started with tortilla strips chosen for their lower sodium concentration. They were topped with shredded cheddar cheese, diced onions, black beans, salsa, and some sour cream. The less of the fattening cheese and sour cream you can get away with adding, the healthier you will feel in the end. Chipotles are peppers in a spicier, almost barbeque tasting sauce. It isn't right for all people. There are just a few on this dish for added flavor. This meal is really high on the speed list and does go over well when you are thinking of picky eaters.
Now, there is a variation to these nachos. It's the concept of nachos plus a salad or a taco salad. It is called a "Haystack" and the reason why is that it always starts out small and ends up getting larger than you expected. It generally includes all of the following and is perfect when you aren't sure how many guests you are going to have because you can always make more of it. On the other hand, there are lots of dishes to clean because there is a bowl and a spoon for every ingredient. But haystacks are popular and tasty. Take a look.
