We're big fans of Mexican, and generally don't mind a visit to Taco Bell when it's good. However, since Taco Bell has come out with a line of products in grocery stores, we prefer to do Taco Bell at home. We use the vegetarian blend refried beans and on occasion their medium taco Sauce. Most of the time Paul likes his Cholula sauce instead. It has a stronger vinegar taste.
Taco Bell-at-home gives you more options than the restaurant can provide. Flour tortillas come in burrito size or fajita size. If you want smaler wraps, you can use the fajita wrappers. We can make our own guacamole with lots of fresh garlic, rice, and "salad" to go on top, inside, or on the side for a more balanced meal. On this occasion, I chose to caramelize some onions to go on the inside, an idea I acquired from a fellow "lover of cookin". That was quite a treat. Thank you, Mrs. Edgerton. I recommend researching cookbooks and on line to find a recipe that sounds the most enticing and uses the least amount of butter. I do not yet have one to recommend. I am still researching that for myself.
Making Burritos and soft tacos at home can also be a great way to monitor calories if you are trying to loose weight. For example, you can limit the amount of cheese and sour cream you add to your meal and add fiber by stuffing some brown rice inside the burrito. Unless you are already passing by a fast-food Mexican restaurant, you will come up on the winning end of your budget--perhaps even better depending on what you like on your burrito.
