I was feeling guilty about not having cooked a good, solid meal in a week as we had eaten out a lot with friends and had been on vacation. So when I came across a new variety of frozen vegetables in the grocery store, I took a chance.

I prefer Bird's Eye vegetables to other frozen vegetables because most of them come with some form of seasoning already added. You are actually allowed to experiment with flavor. In this case, we had sugar snap peas, asparagus, carrots and red bell peppers in a lime cilantro sauce. The dish could be microwaved or steamed on the stove. I chose the stove--however, you must watch the meal more closely in that case.

An easy meal hint is to at least start with a base of vegetables already cut. Then add desired veggies to complete the selection. We added fresh broccoli and diced onions to the mixture. I was quite surprised to find there was enough seasoning to cover all the vegetables, including those I added to the pot. Most boxes limit their amount of sauces to save money. The flavor was mild and spread over the veggies nicely. Any more sauce and the plate would look too cooked. Instead the vegetables were lightly steamed--leaving a slight crunch and as much fresh flavor as possible.

I served the meal with hashbrown potato patties and a vegetarian-based soy meat called Fri-Chik by Worthington Foods. The product comes in a can and when sliced vertically yields cute little patties of meat.
