Paul likes his Asian food the way he likes it. Sometimes, I have items that must be used and a stir-fry is about the best place to do it. So, there have been times I tell him he must eat what is served. I can't threaten him with cereal cause he'd be happy to eat cereal for dinner any night (and we have!)
Recipe of Stir-frying
- Cook brown rice according to package directions.
- Slice onions as thinly as you can without cutting off your fingernails.
- Mince 3 cloves garlic.
- Julienne carrots with the new julienne slicer your aunt-in-law just sent you.
- Pull out frozen snow pea pods.
- Dice Fri-chik or other soy meat.
- Pour two tablespoons oil into wok or large skillet. Heat to medium, medium-high.
- Add vegetables in order, but add chicken before snow pea pods.
- Cook each thoroughly, stirring regularly. When all is cooked, add rice. Stir more.
- Soy Sauce works, but I often use the Pad Thai sauce from "Moosewood Cooks at Home."
This meal was simple and light. Any number of veggies may be added. I happened upon the microwaveable Success Rice and for the first time in a long time made brown rice of which I was actually proud. My stove-top methods fell by the way-side a long time ago. But I am successful now!
